We always like to go the extra mile for the holidays, but that doesn't have to mean lots of work! Take advantage of some market shortcuts for this holiday-festive Spinach Casserole Surprise. This comforting veggie bake will team with any of your holiday favorites.

What You'll Need

  • 1 (3-ounce) package cream cheese, softened
  • 1/4 cup (½ stick) butter, softened
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (10-ounces) packages frozen chopped spinach, thawed and well drained
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped pecans

What to Do

  1. Preheat oven to 350 degrees F. Coat a 1 1/2-quart casserole dish with cooking spray, set aside.
  2. In a large bowl, combine the cream cheese, butter, salt, and pepper; mix well. Add spinach; mix well.
  3. Spoon mixture into casserole dish. Sprinkle with cheese, then with pecans.
  4. Bake 30 to 35 minutes, or until heated through and top is golden.

Has anyone made this using fresh (or wilted) spinach?

Test Kitchen has not tried making with fresh spinach, but believes if you saute 20 ounces of fresh spinach in oil, in a skillet until wilted, that should work. :)

Well? 3 0z. or 8 0z.?

Hi there! The correct amount of cream cheese is 3-ounces. However, if you decide to use 8-ounces you'll just have an extra-creamy casserole. Enjoy!

I want to make sure it is 3oz. not 8 oz. cream cheese?

I also doubt "3 oz". With 2 packages of 10oz spinach, I'd go with 8 oz.

So what's the verdict? 3 0z. or 8 oz.?

Sounds great, but I would leave out the nuts for sure. Also would change the name. Working at a hospital for years, I have learned to avoid any thing with Surprise or Delight in the title. take care all and thanks

This was really good & so simple to make! I toasted the pecans before adding them. The only thing i would do different next time is add cheese in the last 5 minutes of baking.

could you use drained canned spinach?

I was trying to figure out if this is a side dish or a dip for veggies and chips of a sort...just wondering....

Could this be doubled and put into a 9 x 13 inch casserole. cooked the same length of time?--8 are coming for Thanksgiving!
